These fries are a nutritious and flavorful alternative to traditional fries, and they’re excellent for a quick weeknight meal. With a few simple tips, you can achieve that perfect crispy texture that everyone craves. My picky eaters are very particular about the texture of their fries and like most, are not fans of soggy or overcooked/burned sweet potato fries.  So how do we achieve that crispy exterior and soft interior that makes fries irresistible?

Follow these steps for the crispiest baked sweet potato fry:

  • Cut sweet potato fries evenly to ensure they cook evenly.
  • Soak fries in cold water for at least 15 minutes to remove starch.
  • Pat the fries dry to remove any excess moisture.
  • Coat fries in a mixture of cornstarch, olive oil, and seasonings for added flavor and crispiness.
  • Arrange fries on a parchment paper-lined tray, making sure not to overcrowd them.
  • Rotate the fries halfway through baking to ensure even cooking.
  • Serve immediately to enjoy the crispy exterior and soft interior.

How to make them:

  1. Wash sweet potato well and pat dry. Either peel the skin or keep the skin on and cut your fries into ¼-inch fries. Both taste great, and the skin does have additional nutrients and saves you time, so I am all for keeping the sweet potato skin on.
  2. Add them to a bowl or container of cold water for at least 15 minutes to remove the starch from the potato. You can do this the day before and place the raw sweet potato fries covered in cold water in the fridge. This is what I often do when I meal prep for my family dinners the night before.
  3. Drain water and pat the sweet potatoes dry as best you can.
  4. Add cornstarch, seasoning, and olive oil before baking. This outer layer of cornstarch removes any excess moisture from the potato and creates that crispy crunchy fry.
  5. Place each seasoned sweet potato fry evenly on a tray lined with parchment paper. Do not overlap the fries or overcrowd them (use two trays or batch bake)
  6. Bake at 425°C for 20 minutes, flipping halfway.  
  7. Remove from oven and serve with your family’s favorite condiment.

Ingredients

  • 2 medium sweet potatoes
  • 2 tablespoon cornstarch
  • 2 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon oregano

Instructions

  1. Preheat your oven to 425°F
  2. Wash and pat dry the sweet potatoes. Either peel the skin or keep the skin on and cut the sweet potato into 1/4-inch fries.
  3. Place the sweet potato fries in a bowl or container of cold water for at least 15 minutes to remove the starch. Drain the water and pat the sweet potatoes dry as best you can.
  4. In a small bowl, mix the cornstarch, salt, garlic powder, and paprika.
  5. Place the sweet potato fries in a large bowl and drizzle with olive oil. Add the cornstarch mixture and toss the sweet potatoes until they are coated evenly.
  6. Place the sweet potato fries evenly on a baking sheet lined with parchment paper. Do not overcrowd or overlap the fries. Use two baking sheets if necessary.
  7. Bake for 18-20 minutes, flipping halfway through, until the sweet potato fries are crispy and golden brown.
  8. Remove from the oven and allow the sweet potato fries to cool for a few minutes before serving. Serve with your favorite dipping sauce. Enjoy!

Notes

  • If you are short on time, you can skip the soaking and just rinse cut fries in cold water. It will slightly change the texture of the result; however, you will still achieve a delicious sweet potato fry.
  • Switch up the seasoning for your family’s preference, use Cajun seasoning or just keep to basics of salt and olive oil.
  • Please keep in mind that the temperature and time may vary depending on your oven and the thickness of the sweet potato fries. Adjust accordingly to achieve the desired level of crispiness.
